The type of dough Alton Brown always keeps in his kitchen


Pendant Alton Brown Youtube live video, he and his wife, Elizabeth Ingram, are baking a tomato pie. Instead of using homemade pie crust, Brown opts for store-bought frozen puff pastry. During the video, he says, “If you only keep one dough, make it into a puff pastry.” He says he also likes phyllo dough but it can be a “pain in the ass”. Many home cooks use Pepperidge Farm puff pastry which is available in a tri-fold sheet, but Brown prefers to use frozen French puff pastry. The French version is not divided into three parts, which makes it a little easier to roll. Brown also says that the French type does not require as much rolling as the American version.

Puff pastry makes an excellent pie base with its soft, buttery crust. Store-bought frozen pastry takes about 10 minutes to bake, making it a quicker alternative to homemade pie crust (per The Kitchen). If you are using frozen puff pastry, it will take time to thaw. The best practice is to thaw the box in the refrigerator the night before you need it. If you’re not in the mood for pies, puff pastry is great as a crust for pâté en croute, savory palms, and monkey bread (for enjoy your food).
