A new restaurant opened Monday at Bradley Fair serve dishes prepared with local products.
But the owners — Nick Korbee and his wife Amanda Luginbill — don’t call their food “farm-to-table.” They prefer the term “food from here”.
First Mile Kitchen, the first of two planned Wichita ventures by Korbee and Luginbill, has taken over the former Good Egg space in the northeast corner of Bradley Fair, the mall of 21st and Rock. The restaurant is at the back of the mall, east of YaYa’s Eurobistro.
Although the restaurant is open for breakfast, lunch and dinner, the owners are asking people to make reservations at the moment. www.firstmilekitchen.com before they come. The reservations policy will likely continue for about 10 days, Korbee said, although First Mile reserves limited space for walk-in customers.
First Mile Kitchen is nothing like The Good Egg and features modern finishes, a wooden bar, fireplace and Windsor-style chairs. The kitchen is equipped with a “fire pit” for grilling and cooking.
Chef James McBride helped create two different menus – one for the day and one for the evening.
For now, First Mile is serving coffee and pastries like the Apple Rye Breadcrumb Muffin, Pistachio Danish and Dill Havarti Scone from 7 a.m. to 10 a.m. Soon they will start offering the full menu of the day at 7am. 10 a.m. to 3 p.m. and includes brunch and lunch items including a smoked brisket breakfast burrito, egg sandwich on a croissant, malt pancakes, various salads, a burger and a “extra chic grilled cheese” made with sourdough seeded with apple butter, Havarti and colby jack cheeses, arugula and pear.
From 3 to 5 p.m., people can order from a “snacks” menu that includes entrees like ricotta toast, brisket croquetas, and sweet potato fries. Dinner service begins at 5:00 p.m. and lasts until 10:00 p.m. on weekdays and 11:00 p.m. on weekends. It includes sides to share and starters of pasta, chicken, salmon and various steaks. First Mile also offers several craft cocktails as well as beer and wine starting at 10 a.m. daily.

Ohio-native Korbee opened a restaurant called Egg Shop in New York’s Soho neighborhood in 2014. It features an egg-centric menu created with local ingredients and was popular enough that the partners added a second location in Brooklyn in 2017. Korbee went on to write “Egg Shop: The Cookbook,” a book full of egg recipes and cooking techniques that has a comedic twist.
He moved with Luginbill, a Newton native, to Wichita in early 2020.
The couple are also working on opening First Mile Canteen on the ground floor of Fidelity Bank’s new RISE parking lot at 320 N. Market. They hope to open it in the spring.
